

We have a great interest and have love for Scottish Game in Carfraemill. Jo was brought up in a family where the shooting season was very much part of the family calendar and many meals of grouse, pheasant, partridge, duck and venison have been enjoyed over the years. Jim brought up at Hillhouse behind Carfraemill has experienced some of the best pheasant shooting in the Scottish Borders. The shooting at Hillhouse is now looked after by Eskdale Shooting Services. This year we are the proud winners of the “What’s your Game Cookery Competition” sponsored by Braehead Foods of Perthshire.
Mary our Head Chef has a particular interest in game cookery and many interesting dishes are on offer on our menus throughout the year.
The prize for the competition for 3 members of staff was a trip to Perthshire which included clay pigeon shooting, pheasant, duck and partridge shooting and a days stalking. Susan, our function manager to her amazement shot her first duck and pheasant and Mary shot her first hind.
As Susan said “We were absolutely delighted to win the “What’s Your Game” competition. The 1st prize was an invitation for Mary Shaw (head chef), David Sutherland and myself to participate in a deer stalking, pheasant, partridge and duck shooting experience on some of the best estates in Scotland. We had some expert tuition and we each had an experienced minder to keep us out of trouble, but to my utter amazement, by the end of the first morning, I had bagged my first duck and pheasant! The trip gave me a great insight into shooting and deer stalking and I now feel that I have more confidence to discuss the day’s activities with our shooting parties at Carfraemill. I also feel that the trip has increased my understanding of what our sporting guests are looking for in a hotel. After 3 days at the mercy of the Scottish weather, I certainly appreciated a hot bath, log fire and a hearty dinner”! And that is just what we would like to offer you at Carfraemill!
